Coconut chia pudding

Have you jumped on the Chia pudding band wagon yet? It’s rare to go out for breakfast and not see a Chia pudding on the menu these days. Chia seeds are one of the newest super food crazes and they go well in pretty much everything! They are a great source of protein, omega 3 fatty acids, calcium and fibre. Although they are very small in size, chia seeds are packed full of important nutrients and have fantastic health benefits. You don’t have to eat out to enjoy a delicious chia pudding, why not try making one at home? Better yet, make a batch and serve them at a brunch to impress your friends. Check out our recipe for this delicious dairy free coconut chia pudding that will really leave you wanting more.

What you need:

  • 3/4 cup of diary free coconut yoghurt
  • 3 teaspoons of black chia seeds
  • 5 – 10 almonds
  • 1 teaspoon of hulled sunflower seeds
  • 1 teaspoon of pepitas
  • 5 – 10 blueberries
  • 5 – 10 raspberries
  • 2 teaspoons of flaked coconut

You can buy coconut milk yoghurt from the supermarket or even better, make it yourself. Check out our simple recipeto have a go at making it yourself! Process

  • Stir the Chia seeds into the yoghurt until well combined
  • Scatter the sunflower seeds, almonds and pepitas on top of the yoghurt mixture
  • Top with blueberries and raspberries
  • Sprinkle with flaked coconut
  • Place the yoghurt mixture into the fridge for 15-20 minutes or until set to a pudding consistency
  • Serve and enjoy! It really is that simple!
